    Ajwain (King's Caraway) is essential with Dal and vegetable dishes. Frequently it is roasted in ghee before use. Often incorrectly called lovage or celery seed. Ajwain tastes like caraway or thyme, only stronger.

    The seeds are small, gray-green in color and quite peppery when raw, but milder when cooked. According to Ayurvedic teaching Ajwain eliminates deep-seated Ama, calms the Vata dosha and revitalises prana, the vital energy (not scientifically proven). Ajwain - goes well with ginger and makes potatoes, pastries, breads and legumes easier to digest.

    Asafoetida should be in every kitchen. Usually it is combined with other spices such as ginger, cardamom and rock salt and is available in powder and paste. It has a strong garlic odor, therefore it is advisable to keep asafoetida in an airtight container.

    These mixed herbs are composed especially for Dal and cabbage meals. They reduce its flatulent properties and make the meal more reconciable. The slightly bitter taste of fenugreek will be softened by roasting it in Ghee (clarified butter). When boiled Asafetida looses its severe smell.

    Unlike garlic , it does not affect tamasic (dulling) on the senses and the mind. Asafoetida further strengthens Agni (the digestive fire) and calms Vata (air / ether element).

    Asafoetida is a resin which requires a base substance in ground form. The combination with Fenugreek is ideal.

    Methia supports the entire metabolism, and especially; those those who are a little weak with a kapha constitution. Methia can often (but sparingly) be used in each case.
