2. Ayurveda advice for February – about exercise

February is a continuation of the Kapha season, and since Kapha has qualities of being sluggish and dull and stable and grounded, the opposite qualities will bring balance, and exercise more than anything else brings movement and lightness and quickness, and stimulates the system.

Exercise is excellent to stimulate all the body’s metabolisms and thereby to burn off toxins which otherwise gather. So it flushes out tissues and causes a feeling of renewal.  MORE

At this time of year it’s a good idea to start thinking about giving your mind and body a good Spring clean.

Toxins accumulate all year round: some from the environment, caused by pollution, stress and pesticides and preservatives in food; others the result of improper digestion (termed ama by Ayurveda).

These toxins can lodge in the body, build up and even move to new sites. Some are water soluble and easy to flush through, others are fat soluble and require special measures.

5. Recipe - Chapattis

Chapattis are easy to digest and an alternative to yeasted breads. Home made chapattis are fresher, and tastier, than those from a shop.

You can buy chapatti flour at Indian food shops but it may be difficult to find an organic brand. A finely ground whole-wheat flour, or spelt flour, will work almost as well.

100g flour
¼ tsp salt
Approx. 60ml lukewarm water

Sieve the flour and salt into a bowl and gradually mix in lukewarm water until you have a dough that holds together. Knead for about 3 – 5 minutes until smooth. Leave to ‘rest’ in a covered bowl at room temperature. This resting period is vital for the chapattis to puff up when cooked.

Knead again for a few minutes and divide into 4 or 5 pieces. Roll into balls, flatten each one with your hand and roll out on a lightly floured worktop. (You can roll out successive ones while the previous one is cooking). They should be thin, and a convenient size is about the size of a CD.

Cook them in a dry pan or, better still, on the middle shelf of the oven (preheated to about 180 Centigrade). Cooking takes a minute or two.

When cooked, stack in a pile (which keeps them all warm).

Chapattis can be an addition to your main meals, or a quick snack spread with cream cheese, or honey, or tahini.
